This is from rainbow trout farmed in Ireland. The eggs are a little smaller than salmon eggs but most people wouldn’t know the difference. Tasted side by side, we thought this trout roe has a slightly lighter taste. Also, the eggs are more pristine.
A simple winner every time: a dollop of crème fraîche on a blini then a spoonful of trout caviar on top.
